Easter Turkey-The Beginning

Picked up a 12Lb turkey at Wegmans. First step is the 24hr+ brine

Brine: (recipe courtesy of Tom and Cort at Shinnecock Hardware )

  • 2 gallons cold water
  • 1/2 Gal Apple Cider
  • 1 1/2 cup Kosher Salt
  • 1/2 cup Brown Sugar
  • 1/2 cup white wine
  • Crush garlic (3-4 cloves)
  • 1 TBS Dizzy Dust
  • Ice

Completely mixed the above ingredients.

Washed off bird under cold water and removed all the nastiness (neck and gizzards)

Placed in a 5 gallon igloo cooler (24 bucks at Target). Perfect brining vessel BTW

Will let brine in the garage for 24hrs +.
