Grilled Filet Mignon with Rice and Chopped Salad

Enjoyed the day on the boat “Lazy Dayz” with the family.   Cruised down near Annapolis then returned to the upper chesapeake to try some bottom fishing.   We caught several perch and a few SMALL striped bass/rockfish.   Had a great time.  It was nice to get out there after the last couple trips have been postponed due to weather/wind.

Grilled up two Filet Mignon steaks from Gore’s Meats, sprinkled with a bit of Dizzy Pig’s “Raising the Steaks” rub.   Pre-heated the Kamado Joe (Bessie) to 500-550 degrees and used the grill grates to get those nice diamond shaped grill marks.

 

Grilled for 2 minutes (1/4 turn), 2 minutes (flip), 2 minutes (1/4 turn), 2 minutes (remove).  Added ~1/2 tsp of butter to top of finished steaks.

Served with the remainder of the chopped salad I just posted about (the other half of the bag) and some rice.

Steaks were very tender and had great flavor.
