Grilled Fried Chicken

Fired up Josie on this snowy/icy Sunday to make some “Grilled Fried Chicken” – recipe from John from the Kamado Joe cooking channel.

Pretty simple – marinate chicken in a buttermilk/hot-sauce mix for 2 hrs (can go overnight).

Ingredients
  • Chicken - drumsticks, breasts, thighs
  • 2 cups buttermilk
  • hot sauce
  • 2 cups flour
  • 1 tsp fresh cracked pepper
  • 1 tbsp favorite poultry seasoning/rub
  • 3 eggs
  • ½ cup water
Instructions
  1. Rinse chicken, marinate in 2 cups of buttermilk and 1 cup hot sauce
  2. Batter - mix 3 eggs, flour, pepper, seasoning, and water.
  3. Dredge chicken in regular flour, then coat with batter.
  4. Fire up Kamado Joe to 350, cook chicken (indirect) for approx 1 hour.

Turned out pretty good – I would figure out a way to crisp it up a bit more next time.

Marinated BBQ Chicken Thighs

Picked up some boneless chicken thighs (around 3 LBS). Figured would try something different since last time I used bone-in.

Used the same marinade as I posted about recently. The only difference is that I used lime juice instead of lemon juice. These were in the fridge for about 24 hours so plenty of time to soak up the tasty marinade.

After this time, the chicken was removed from the fridge and coated with Dizzy Pig Tsunami Spin and Jamaican Firewalk spice rubs.

Heated the Kamado Joe (Bessie) to around 300 degrees using Wicked Good Charcoal. To avoid burning I used the raised cooking grate (also known as a grill extender).

Grilled the chicken for about 20-25 minutes flipping once half way through then again with about 5 minutes left. Coating with Two Fat Guys BBQ Sauce (Smokey flavor).

Chicken was OnPoint!! So much moisture and tons of flavor. Had plenty left over, which was great for a late night snack and for lunch today.

I think I will go with the boneless again. Can’t beat it. Around 6 dollars and we got 2-3 meals out of it (for 2 people).

Will be grilling up a flank steak shorty and hope to update the site tonight with a new steak marinade.

Grilled Marinated Chicken Thighs

Finished up a great birthday weekend with some grilled marinated chicken thighs.

I picked up a large pack of bone-in chicken thighs at Wegman’s, removed the skin and marinated  for ~5 hours

Marinade

1 cup Teriyaki Sauce (low sodium)

4 TBS lemon juice

3 TBS Champagne Vinegar 

1 TBS garlic

3 TBS maple syrup

After the 5 hours, the chicken thighs were removed and coated liberally with Dizzy Pig Dizzy Dust and Jamaican Firewalk .

Preheated the Kamado Joe (Bessie) to 350 degrees and placed the chicken thighs (bone down) on a raised grate to keep the chicken from getting too hot.

After about 25-30 minutes I coated the chicken with my Kansas City Style BBQ Sauce and grilled until internal meat temp hit 165 degrees.

These chicken thighs were super juicy and flavorful.  They also had a nice char to them which adds to the wood-coal flavor.

I can’t wait to try this recipe again with an even longer marinade time to elevate the flavor profile that much more.

Total cooking time about around 40 minutes at 350 degrees.

Served with Tomato and fresh mozzarella drizzled w/balsamic glaze and olive oil (salt & pepper) along with broiled cauliflower tossed with olive oil, Parmesan cheese and garlic.

Dinner – Blackened Mahi Fish Tacos with Lime Sour Cream Sauce, Grilled Corn with Maple Chipotle Butter with a side of Jasmine Rice

One of Karen’s favorite meals is blackened fish tacos from Mama Kwan’s in Kill Devil Hills, NC.

I picked up 2 Mahi Filets from Wegmans, coated with olive oil and a generous amount of blackening spice and seared over high heat for approximately 4-5 min per side.  Served with cabbage, cheese, and lime sour cream sauce.
